While Memorial Day is about much, much more than family barbeques and get togethers (and I could never put into words how grateful I am for the sacrifices of those who have given their lives for our country, and their families), it is unofficially considered the kickoff to grilling, summer, beach trips and all things outdoorsy.
Grilling is my favorite way to prepare food. Something about the smoky flavor, combined with the fact that it can be an easy, healthy option, just makes it so satisfying. It is hard for us, since we can’t have a grill at our apartment, but the complex does have grills at the clubhouse, so we make a point to use them as often as possible. I found a few grilled veggie recipes that sounded really yummy, and also threw in a grilled chicken recipe for good measure.
